Our Story
My grandmother ran a small fonda in Guadalajara for forty years. I grew up next to her stove, watching her press tortillas before sunrise and stack the trompo with pork shoulder marinated in achiote and pineapple. When she passed in 2018, she left me a wooden box of recipes and one rule: never cut corners on the marinade.
El Camino started the next year. I bought a 1972 step van off a man in Lockhart who had been using it to haul hay, parked it on East Cesar Chavez, and served tacos out the window until they ran out. Some nights that was 9pm, some nights that was midnight. The line stretched down the block anyway.
Six years on, we still marinate the pork for 24 hours, still press every tortilla by hand, still make the salsas fresh every morning. The truck has a new engine and a fresh coat of paint, but the recipes have not moved an inch.
